Meal in a Pumpkin

I hosted Mom's Group last week and served this delicious meal, along with several other tasty treats that the other moms provided. Everyone seemed to enjoy it and I thought you might want to try this Autumn treat with your family. Here is the recipe:

2 c. water
1 c. uncooked brown rice
2 t. chicken bouillon granules
1/2 t. curry powder
1 lb. bulk sausage
4 c. sliced fresh mushrooms
1 small onion, chopped
1 garlic clove, minced
5 T. dried currants (I used craisins)
1/2 c. Chicken broth
1 t. poultry seasoning
1/2 t. rubbed sage
1/4 t. dried marjoram
2 medium pie pumpkins
salt
garlic powder

  1. Bring water, rice, bouillon and curry powder to a boil. Reduce heat; cover and simmer for 45-50 minutes or until tender.
  2. Meanwhile, cook sausage; drain and set aside. In the same skillet, saute mushrooms, onion and garlic for 3-5 minutes. Reduce heat; add the currants, broth, and seasonings.
  3. Return sausage to the pan. Cook and stir for 5-7 minutes or until liquid is absorbed. Remove from heat and stir in rice.
  4. Wash pumpkins. Cut a 3 inch circle around each stem. remove and discard loose fibers and seeds. Prick inside each pumpkin with a fork; sprink with salt and garlic powder. Stuff with sausage mixture. Replace tops.
  5. Place in a 9x13 inch pan and add 1/2 inch of water. Bake, uncovered, at 350 degrees for 30 minutes. Cover loosely with foil; bake 45-50 minutes longer or until tender. Cut each pumpkin into wedges to serve.
